vanilla coca cola cupcakes
a few weekends ago i went to visit my friend Jennifer in Charleston. she had just found out that she was getting deployed to Qatar for 365 days and only had a couple of weeks to prepare for it. it was a very stressful time for her knowing that she would be away from her husband to which she had only been married two months to. so i drove down the weekend before she left to see her one more time and while i was there i notice some cupcakes sitting on her counter that she had picked up earlier in the week from a local cupcake shop. one of the cupcakes was called the Coca-Cola Cupcake so i tried a little piece of it and although it was good i just couldn't taste the coke part of it. so the next day after saying our goodbyes and driving back home in the pouring rain i decided i was going to try my hand at making the cupcakes. the following weekend i completed my task and here's the result.
Cupcake:
2 c coca-cola
1 c dark unsweetened cocoa powder (i used Hershey's brand)
1/2 c (1 stick) unsalted butter, cut into 1-inch pieces
1 1/4 c granulated sugar
1/2 c firmly packed dark brown sugar
2 c all-purpose flour
1 1/4 tsp baking soda
1 tsp salt
2 large eggs
Preheat the oven to 325 degrees and place cupcake liners in each cupcake tin.
In a medium saucepan, heat the Coca-Cola, cocoa powder, and butter over medium heat until the butter has completely melted. Add both sugars to saucepan and whisk until dissolved. Remove from the heat and let cool. In a large bowl, whisk the flour, baking soda, and salt together and set aside.
In a small bowl, whisk the eggs until just beaten, then whisk them into the COOLED cocoa mixture until combined well. Gently fold the flour mixture into the cocoa mix. The batter will be slightly lumpy (that is good). Do Not Over Beat.
Pour the batter into the prepared cupcake liners and bake for 20 minutes, rotating the pan halfway through the baking time. Remove from oven and if the toothpick comes out clean they are ready. Transfer the cupcakes to a wire rack to cool completely.
Vanilla Buttercream Frosting:
1 c unsalted butter (2 sticks), softened
3 c confectioners (powdered) sugar
1/4 tsp salt
1 tbsp vanilla extract
2 tbsp milk or heavy cream
Maraschino Cherries
Beat butter for a few minutes with mixer with the paddle attachment on medium speed. Add 3 cups powdered sugar (if you have the plastic cover for your mixer this would be the time to use it) and mix until the sugar has been incorporated with the butter. Add vanilla extract, salt, and 2 tbsp of milk/cream and beat for 3 minutes. If your frosting needs a more stiff consistency, add more sugar. If your frosting needs to be thinned out, add another 1 or 2 tbsp milk/cream.
as you can tell with the pictures the frosting comes out perfect for decorating and piping on the cupcakes. the only problem is that i'm really bad at piping so hopefully you can do a better job then i did. but i can say even though my piping wasn't as beautiful as i would have liked it to be the taste of the cupcake and the frosting together was incredible! next time i get around to making these again i think i may try putting coke in the frosting to give it even more of a coke taste.
